Raw Fruit Raita without Curd

Ingredients for Raw Fruit Raita:

  1. Pineapple chopped fine – 5 big spoons
    Apple chopped fine – 5 big spoons
    Carrot chopped fine – 4 small spoons
    Onions chopped fine – 4 big spoons
    Bird’s eye chilli (Kanthari) – 2, chopped fine
    Ginger chopped fine – ½ small spoon
    Cilantro/curry leaves – As needed

For raw curd:

  1. Cashews – 20, soaked
  2. Lemon juice – From 3 lemons
    Rock salt – As per taste

How to prepare Raw Fruit Raita?

  1. Mix ingredients no: 1 together to prepare the salad.
  2. Make a fine paste of cashews and add lemon juice and salt.
  3. Add this raw curd to the salad and mix well.
