Kozhi Ada is different from traditional Ada preparations. Generally, Ada is a traditional Kerala snack or sweet prepared using plantain leaves or other types of leaves. The sweet or spicy filling is placed inside the leaf and is either cooked on a tawa or steamed. There is a wide range of Kerala ada recipes, prepared for different occasions. Rice flour, maida or wheat flour is generally used in its preparation, and a stuffing of your choice is also used. It serves as a breakfast or an evening snack. It is widely grouped as a healthy snack because the frying method is avoided. But Kozhi Ada is different. It substitutes rice flour with all-purpose flour, and the deep-frying method is used. 
 
Here is the recipe for Kozhi Ada (Chicken Ada). The outer layer is crispy,  and the inner portion is filled with minced chicken and a flavorful chicken masala (onions, green chilies, ginger, garlic, turmeric, chilli powder). This snack is deep-fried in oil. The result is a soft, aromatic, mildly spicy parcel that highlights Kerala’s love for non-veg food and coconut oil. Unlike sweet elai ada (banana leaf parcels with coconut-jaggery filling), Kozhi Ada is savoury and non-veg, with the minced chicken giving a delicious umami kick. You can also serve it as a main course, and no side dishes are needed.

Kozhi Ada recipe

Ingredients for Kozhi Ada:

  1. Boneless chicken – ¼ kg
    Turmeric powder – ½ small spoon
    Salt – As required
  2. Oil – 2 big spoons
  3. Ginger – 1 small piece chopped fine
    Garlic -3 cloves, chopped fine
    Green chillies – 5, chopped fine
    Curry leaves – 2 stalks
  4. Onions – 3 big, chopped fine
  5. Garam masala powder – 1 small spoon
  6. Maida – 2 cups
    Ghee – ¼ cup
    Salt – As required
  7. Oil – For frying

How to prepare Kozhi Ada?

  1. Cook chicken, adding turmeric powder and salt. Water should be fully absorbed. Then blend it once in a mixer.
  2. Heat oil and saute ingredients no: 3. Then sauté onions.
  3. Add garam masala powder and minced chicken and sauté for a few more minutes.
  4. Prepare the dough by mixing ingredients no: 6, adding sufficient water.
  5. Make small balls from the prepared flour. It will be around 25 balls.
  6. Now spread each ball and place chicken filling inside it.
  7. Fold one side of the ada to form a half-moon shape and stick the edges.
  8. Heat the oil and fry each piece at medium heat.
  9. Fry both sides and serve hot.
