Tricolour Idiyappam

Ingredients for Tricolour Idiyappam:

1. Coconut scrapped – ½ cup

    Cashews fried in ghee – 50 gm

    Raisins fried in ghee – 50 gm

2. Rice flour – 3 cups

3. Salt, water – As needed

4. Carrot cooked and smashed – ¼ cup

5. Green peas cooked and smashed – ¼ cup

How to prepare Tricolour Idiyappam?

1. Mix together ingredients no: 1 and keep aside.

2. Divide rice flour into three equal parts.

3. In one part, add carrot, salt and water to prepare idiyappam batter.

4. In the second part, add green peas, salt and water to prepare idiyappam batter.

5. In the third part, add salt and water to prepare idiyappam batter.

6. Now you will get idiyappam batter with three different colours – orange, green and white.

7. In greased moulds of an idli tray, place a little coconut mixture.

8. Then make three layers from prepared batter using a sevanazhi (idiyappam maker).

9. You can fill the moulds in the order – orange, green and white, or any choice of yours.

10. Place a layer of coconut layer on idiyappam as toppings too.

11. Steam cook them and serve hot.
