Potato Mixture

Ingredients for Potato Mixture:

1. Potato – Peeled and cut into 2-inch strips – Approximately 4 cups 

    Oil – As required for frying 

2. Cashew nuts – Fried in oil and strained – 1 cup 

    Raisins – Fried in oil and strained – ¼ cup 

3. Ghee – A little 

    Couscous – 2 tbsp 

4. Ghee – ½ tsp 

    Green chilli – Chopped – 1 tbsp 

5. Sugar – ½ tsp 

    Salt – As required 

How to prepare Potato Mixture?

1. Cut the potatoes lengthwise, wash carefully without breaking, and drain the water. 

2. Then fry in hot oil until crispy and golden brown. This should yield 3 cups. 

3. Add the fried cashew nuts and raisins to the potato mixture and keep aside. 

4. Grease a pan with a little ghee and roast the couscous lightly without changing its color. 

5. In the same pan, add ½ tsp ghee and sauté the chopped green chilli. 

6. Add this, along with the roasted couscous, sugar, and required salt, to the fried mixture and combine well. 

7. Once cooled, store in an airtight container without losing its crispiness.
