Potato Leek Soup - creamy soup recipe

Ingredients for Potato – Leek Soup:

1. Unsalted butter – 2 tbsp

2 . Leeks – 2 (375 g), finely chopped

3. Bay leaf – 2

     Thyme – 1 tsp

    Garlic – 3 cloves, crushed

4. Water – 4 cups

     Chicken stock – 4 cups

     Fish sauce – 2 tbsp

     Potato – 500 g, cut into small cubes

5. Heavy cream – 1 cup

6. Salt, pepper – As required

7. Spring onion leaves, finely chopped, fresh herbs – To decorate

8. Black pepper – As required

How to prepare Potato – Leek Soup?

1. Heat butter in a pressure cooker and sauté the leeks until soft.

2. Add the third set of ingredients and sauté well.

3. Add the fourth set of ingredients, mix well, close the cooker, and cook.

4. After three whistles, switch off the flame. Once the pressure releases, open the cooker and add cream. Mix well.

5. If a creamy soup is required, blend the mixture in a mixer.

6. Adjust salt and black pepper according to taste and mix well.

7. Garnish with spring onion leaves and sprinkle black pepper on top before serving.
