Pazham Nurukk – Recipe 1

Ingredients for Pazham Nurukk (Method 1):
1. Ghee – ½ cup
2. Kerala banana (Ethapazham) – 2 big, chopped into 6 pieces each
3. Melted jaggery – ½ cup
4. Cardamom powder – 1 small spoon
How to prepare Pazham Nurukk (Method 1)?
1. Heat ghee in a pan and saute the banana pieces.
2. When it turns golden brown, add melted jaggery and mix well.
3. Cook for 3 more minutes and add cardamom powder.
4. Put off the flame and serve in a banana leaf.

Pazham Nurukk – Recipe 2
Ingredients for Pazham Nurukk (Method 2):
1. Jaggery – 150 g
2. Cardamom – 3, powdered
Ghee – 100 gm
3. Ethapazham (Kerala banana) – 4, well-ripened
How to prepare Pazham Nurukk (Method 2)?
1. Melt jaggery and strain it to remove dust and impurities.
2. Add cardamom and ghee to jaggery and mix well.
3. Remove the skin of the banana, and cut into round pieces with a 2-inch thickness.
4. Add banana pieces to the jaggery mixture and place in flame.
5. Continue cooking till it thickens.
6. When the banana is well-cooked and the jaggery solution is fully absorbed, turn off the flame.

Pazham Nurukk – Recipe 3

Ingredients for Pazham Nurukk (Method 3):
1. Well-ripened Kerala Banana – 3
2. Jaggery – 4 blocks, melted
3. Ghee – ½ teaspoon
4. Dry Ginger Powder – ¼ teaspoon
Cardamom Powder – ¼ teaspoon
How to prepare Pazham Nurukk (Method 3)?
1. Cut the Kerala banana lengthwise into four and then into small pieces.
2. Add the banana pieces to the jaggery syrup and sauté well.
3. Add ghee and continue sautéing until it turns a nice brown color.
4. Add dry ginger powder and cardamom powder.
5. Serve hot with pappadam.
