Malayan Fish Curry

Ingredients for Malayan Fish Curry:

1. Fish of any kind with a thick flesh – Half kg, cut into big size pieces

2. Turmeric powder and salt – Half small spoon each

3. Oil – 3/4 to 1 cup

4. Red Chillies – 8

    Shallots – 60 gms

    Garlic – 10 cloves

5. Thick tamarind juice – Half cup

    Salt – For taste

    Sugar – Half small spoon

How to prepare Malayan Fish Curry?

1. Clean fish, cut into pieces and marinate using salt and turmeric powder.

2. Allow it to rest for 10 or 15 minutes.

3. Heat a little oil and shallow fry the fish pieces for a few minutes until both sides are fried.

4. Make a fine paste of ingredients 4.

5. Heat the remaining oil and add the ground masala paste.

6. Saute it for a few minutes until a pleasant odour comes out.

7. Add some water (you can wash the jar used for grinding and use this water), tamarind juice, salt and sugar.

8. Stir all the contents together and bring it to boil. Use low flame.

9. When it starts to boil add the half-fried fish pieces and cook it.

10. When the fish pieces are fully cooked and gravy thickens, you can put off the flame.

N.B: The fish gets a fine coat of the thick gravy.
