Kalmas

Ingredients for Kalmas:

1. Chicken – 350g 

2. Salt – As required 

   Turmeric powder – 1/2 tsp 

3. Oil – As required 

4. Onion – 3, sliced 

    Green chilli – 4, sliced 

    Ginger-garlic paste – 1 tsp 

5. Garam masala powder – 1/2 tsp 

    Turmeric powder – 1/2 tsp 

    Chicken masala – 3/4 tsp 

6. Coriander leaves, Curry leaves – As required 

7. Rice flour – 2 cups 

8. Grated coconut – 1 cup 

    Fennel seeds – 1 3/4 tsp 

    Cumin seeds – 1/4 tsp 

    Shallots – 9 

9. Chilli powder – 3 tbsp 

    Turmeric powder – 1/2 tsp 

    Salt – As required 

10. Oil – 2 tsp 

How to prepare Kalmas?

1. Cook chicken with salt and turmeric powder, then shred it.

2. Heat oil and sauté the fourth set of ingredients. Add the cooked chicken and sauté well.

3. Add the fifth set of ingredients and sauté. Finally, add coriander leaves and curry leaves, mix well, and set aside. This is the filling.

4. In a large bowl, add rice flour. Blend the eighth set of ingredients in a mixer and add it to the flour.

5. Add hot water gradually and knead into a dough. Form small balls.

6. Flatten each ball on an oiled palm, place a portion of the chicken filling in the center, and roll into the shape of ‘Unnakaya’.

7. Steam these rolls in an idli steamer.

8. Mix the ninth set of ingredients in a bowl, coat the steamed Kalmas well with the masala.

9. Finally, shallow fry in a little oil.
