Haleem

Ingredients for Haleem:

1. Broken wheat – 1 cup

2. Oil – ¼ cup

3. Mutton – 1 kg

4. Onions – 6

5. Garlic – 1, full

    Ginger, 1-inch pieces – 2

6. Cinnamon, 1-inch pieces – 2

    Cloves – 8

    Cardamom – 5

7. Green chillies – 4

    Chilli powder – 1 big spoon

8. Curd – 1 cup

9. Shah jeera – ½ small spoon

    Cardamom – 3

10. Lemon – 4

11. Coriander leaves, mint leaves – 50 gm

     Onions (for frying) – 1

How to prepare Haleem?

1. Wash broken wheat, and soak for some time.

2. Then cook it, and keep aside.

3. Heat oil and sauté chopped onions in low flame.

4. When colour starts changing, add mutton and sauté again.

5. Make a fine paste of garlic and ginger, and add to mutton.

6. Sauté the contents, till ginger-garlic paste turns brown.

7. Crush ingredients no: 6 together and add to mutton.

8. Also add chopped green chillies and chilli powder.

9. Add sufficient lukewarm water and curd (blended with a little water).

10. Cook meat in low flame.

11. When it’s done, separate bones from cooked mutton.

12. Put the mutton pieces back to gravy.

13. Add cooked broken wheat, along with lemon juice and powdered sha jeera and cardamom.

14. Add sufficient salt too.

15. Taste your Haleem dish and add extra lemon juice if needed.

16. Decorate with fried onions, coriander leaves and mint leaves.
