easy egg rice

Ingredients for Egg Rice:

1. Oil – Two small spoons 

2 .Eggs – Four 

    Salt – A little 

3. Mustard seeds – One small spoon 

    Dried red chilli (broken) – One small spoon 

    Curry leaves – Two sprigs 

    Cumin seeds – One small spoon 

4. Onion (chopped) – One cup 

    Green chillies (chopped) – Four 

5. Tomato (chopped) – Quarter cup 

    Capsicum (chopped) – Quarter cup 

6. Turmeric powder – One small spoon 

    Chilli powder – Half small spoon 

    Salt – To taste 

7. Basmati rice / raw rice / ponni rice (cooked) – One cup 

8. Pepper powder – Half small spoon 

    Coriander leaves – As needed

How to prepare Egg Rice?

1. Heat oil in a pan, add eggs and salt, scramble well, and set aside. 

2. In the same oil, splutter the ingredients listed as 3. 

3. Add onion and green chillies, and keep sauting. 

4. Then add tomato and capsicum, sauté again, and add the spice powders listed as 6. 

5. Add the scrambled eggs and cooked rice, mix well. 

6. Cook for two minutes on high flame.

7. Add pepper powder and coriander leaves, mix well and remove from heat.
