Chena – Achinga Ularth (Yam – Long Beans Ularth)
Ingredients for Chena – Achinga Ularth (Yam – Long Beans Ularth):
1. Yam cut into 1-inch length pieces – 2 cups
Salt – For taste
Turmeric powder – ¼ small spoon
2. Oil – 2 big spoons
3. Onion – 1, sliced thin
Green chillies – 8, sliced lengthwise
Curry leaves – A stem
4. Long beans (achinga) cut into 1-inch length pieces – 1 cup
How to prepare Chena – Achinga Ularth (Yam – Long Beans Ularth)?
1. Cook yam adding salt, turmeric and sufficient water.
2. When it is 3/4th done, put off the flame and strain water content fully.
3. Heat oil in a pan, and sauté ingredients no: 3.
4. Add long beans and sauté again.
5. When long beans are well cooked, add elephant yam.
6. Continue sauting till vegetables are fully cooked and water content is fully absorbed.
