
Ingredients for Chena – Achinga Ularth (Yam – Long Beans Stir Fry):
- Yam cut into 1-inch pieces – 2 cups
Salt – For taste
Turmeric powder – ¼ small spoon - Oil – 2 big spoons
- Onion – 1, sliced thin
Green chillies – 8, sliced lengthwise
Curry leaves – A stem - Long beans (achinga) cut into 1-inch pieces – 1 cup
How to prepare Chena – Achinga Ularth (Yam – Long Beans Stir Fry)?
- Cook chopped yam by adding salt, turmeric, and sufficient water.
- When it is 3/4th done, turn off the flame and strain the water completely.
- Heat oil in a pan, and sauté the ingredients listed as no: 3.
- Add long beans and sauté again.
- When long beans are well-cooked, add elephant yam pieces.
- Continue sauteeing until vegetables are fully cooked and water content is fully absorbed.
