Chena Achinga Ularth Kerala recipe

Ingredients for Chena – Achinga Ularth (Yam – Long Beans Stir Fry):

  1. Yam cut into 1-inch pieces – 2 cups
    Salt – For taste
    Turmeric powder – ¼ small spoon
  2. Oil – 2 big spoons
  3. Onion – 1, sliced thin
    Green chillies – 8, sliced lengthwise
    Curry leaves – A stem
  4. Long beans (achinga) cut into 1-inch pieces – 1 cup

How to prepare Chena – Achinga Ularth (Yam – Long Beans Stir Fry)?

  1. Cook chopped yam by adding salt, turmeric, and sufficient water.
  2. When it is 3/4th done, turn off the flame and strain the water completely.
  3. Heat oil in a pan, and sauté the ingredients listed as no: 3.
  4.  Add long beans and sauté again.
  5. When long beans are well-cooked, add elephant yam pieces.
  6.  Continue sauteeing until vegetables are fully cooked and water content is fully absorbed.
