Carrot Pachadi

Ingredients for Carrot Pachadi:

1. Dried Red Chilli Seeds – 1/2 Small Spoon

    Garlic – 3 Cloves

    Shallots – 2

2. Coconut Oil – 4 Small Spoons

3. Mustard Seeds – 1/2 Small Spoon

    Fenugreek – 1/4 Small Spoon

    Dried Red Chilli (Chopped) – 3

4. Shallots (Finely Chopped) – 1/4 Cup

    Green Chilli (Finely Chopped) – 2 Small Spoons

    Ginger (Finely Chopped) – 1 Small Spoon

    Curry Leaves – A Little

5. Carrot (Finely Chopped) – 2 Cups

    Curd (Less Sour) – 2 Cups

6. Crushed Mustard – 2 Small Spoons

    Sugar – A Pinch

    Salt – As Required

How to prepare Carrot Pachadi?

1. Grind the first set of ingredients together and keep aside. 

2. Heat oil in a pan, splutter mustard seeds, then add fenugreek and dried red chilies, and sauté. 

3. Add the fifth set of ingredients and sauté until they turn light red. 

4. Add the ground paste, sauté again, and remove from heat. 

5. Once cooled, mix in the finely chopped carrot and beaten curd. 

6. Finally, add the sixth set of ingredients and mix well before serving.
