Ney Pathiri (Ghee Pathiri) + Malabar Chicken Curry
Ingredients for Ney Pathiri (Ghee Pathiri):
1. Raw rice (Puzhungalari) – 1 cup
2. Fennel seeds – 2 small spoons
Onion – 1, small
Coconut scrapped – ½ cup
Salt – For taste
3. Coconut oil – For frying
How to prepare Ney Pathiri (Ghee Pathiri)?
1. Soak rice overnight in lukewarm water.
2. Grind rice to a smooth paste in a grinder, adding ingredients no: 2.
3. Make small balls from dough and spread it like thick dosa.
4. Deep fry in hot oil.
Note: If you are using mixer to grind, you can add a little more rice flour (Puzhungalari) to adjust the consistency of dough.
Ingredients for Malabar Chicken Curry:
1. Chicken – 1 kg
2. Coconut oil – 4 small spoons
3. Cinnamon, bay leaf (Vayana Ila), cloves, cardamom – 2 each
Pepper seeds – 6
4. Crushed ginger – ½ big spoon
Garlic crushed – ½ big spoon
Green chillies – 6, chopped
Onions – 4, chopped
Curry leaves – 2 stalks
5. Chilli powder – 1.5 big spoons
Coriander powder – 1.5 big spoons
Turmeric powder – ¼ small spoon
Garam masala powder – ½ small spoon
Salt – For taste
6. Tomato – 2, big
7. Thick coconut milk – ½ cup
How to prepare Malabar Chicken Curry?
1. Cut chicken into pieces.
2. Heat oil and fry ingredients no: 3.
3. Add ingredients no: 4, one after one and sauté again.
4. When it’s done, add ingredients no: 5 and keep sauting till raw smell goes out.
5. Add tomato pieces and chicken and mix contents well.
6. Add a little hot water and cook chicken.
7. When chicken is cooked and gravy thickens, add coconut milk.
8. Put the flame off and serve hot with pathiri.
