Chakka Ada (also known as Jackfruit Ada, Chakka Ela Ada, or Chakka Appam) is a traditional Kerala sweet snack — a soft, steamed rice parcel/dumpling wrapped in banana leaves and filled with a delicious ripe jackfruit (chakka)-based sweet mixture. It’s a classic Malabar and Central Kerala treat, most commonly prepared in households during jackfruit season. Chakka Ada is prepared using Chakka Vilayichath. In this Kerala traditional delicacy, well-ripened jackfruit is smashed well and fried adding jaggery and ghee. The content should not be dry or thickened. Also read: Some untold stories of Poovada made during the auspicious occasion of Thiruvonam

Jackfruit Ada (Chakka Ada) – Recipe 1

Chakka Ada

Ingredients for Method 1:

  1. Jack fruit vilayichath (sauted and fried well) – 1 cup
  2. Water – 2 cups
  3. Oil – 1 small spoon
    Salt – ½ small spoon
  4. Palappam powder  (Rice flour) – 1 cup
  5. Scraped coconut – 1 cup
    Water -1 big spoon
  6. Cardamom powder (optional) – ½ small spoon
  7. Banana leaves – 6 pieces to cook ada

Ada Preparation Method 1

  1. Boil 2 cups of water.
  2. When it starts boiling, add oil and salt, and mix well.
  3. Pour the boiling water over the rice flour and mix well using a big spoon.
  4. Once it cools, mix the ingredients with your hands and shape them into six balls.
  5. Place ingredients no: 4 in the flame. Once it is heated, add the jackfruit vilayichath.
  6. Stir continuously until the contents mix well, and it should not be thick.
  7.  Turn the flame off and add cardamom powder if you need.
  8.  Divide this mixture into six parts. This mixture is used as filling for Chakka Ada.
  9. Spread each rice ball on banana leaf bits using moist hands.
  10. On one half of this leaf, place one set of jackfruit vilayichath filling and fold the banana leaf.
  11. Jackfruit vilayichath will be sandwiched between two layers of rice powder (see the image).
  12. Repeat the process till 6 adas are prepared.
  13. Steam your chakka ada using a steamer for at least 20 minutes.

How to prepare Chakka Vilayichath (Jackfruit Vilayichath)?

Finely chop half a kilo of well-ripened jackfruit. Add a little water and make a fine paste. Add this paste to a thick-bottomed pan and cook. Add ¼ kilo melted jaggery (prepared by melting jaggery in boiling water) to it and stir continuously. When the water content is fully absorbed, add 50 gms of ghee, mix well and turn the flame off.

Jackfruit Ada (Chakka Ada) – Recipe 2

Ingredients for Method 2:

  1. Jaggery – 150 gm
    Water – 150 milli
  2. Ghee – 5 small spoons
  3. Well-ripened jackfruit – 200 gm
  4. Cardamom powder – 1 small spoon
     Cumin powder – ½ small spoon
  5. Rice flour – 250 gm
  6. Banana leaves – As required

Ada Preparation Method 2

  1. Melt jaggery by adding water, and then strain it.
  2. Heat the ghee and sauté the jackfruit.
  3. When it’s done, add melted jaggery and cook again.
  4. When it’s done, add ingredients no: 4, mix well and take it from the flame.
  5. Allow the contents to cool.
  6. Mix it with rice flour, knead well and prepare the dough.
  7. Make small balls from them and spread them on banana leaf bits.
  8. Fold the banana leaf to fully wrap the filling, and continue the process for the remaining dough too.
  9. Steam cook adas for 15 minutes and serve.
