Special Vishu Kanji (Recipe 2)

Ingredients for Vishu Kanji (Recipe 2):

1. Broad Beans (Puli Amara) – ½ cup 

2. Dry rice – 1 cup 

3. Second coconut milk – 4 cups 

4. Salt – As required 

5. First coconut milk – 1 cup 

How to prepare Vishu Kanji (Recipe 2)?

1. Dry roast the broad beans on a low flame without oil until they start turning reddish and popping — this indicates they are done. 

2. While still slightly warm, remove the skins of the broad beans and wash them. 

3. Cook the broad beans and dry rice together in second coconut milk. When half-cooked, add salt and stir. 

4. Once the mixture reaches a porridge-like consistency, add the first coconut milk, reduce the flame, and let it sit for 1–2 minutes. 

5. Turn off the flame and keep it covered for five minutes. Serve hot.
