Pot Tamarind – Dates Pickle recipe

Ingredients for Pot Tamarind – Dates Pickle (Kudampuli – Eenthappazham Achaar):

1. Coconut oil – 100 gm

2. Mustard – 1 small spoon

3. Garlic – 150 gm

    Ginger – 50 gm

4. Curry leaves – 3 stems

    Green chillies – 5, chopped fine

5. Well-ripened pot tamarind – 4, chopped fine after removing seeds

    Dates chopped fine – 200 gm

6. Chilli powder – 3 small spoons

    Turmeric powder – ¼ small spoon

    Salt – For taste

7. Vinegar – 2 big spoons

How to prepare Pot Tamarind – Dates Pickle (Kudampuli – Eenthappazham Achaar)?

1. Heat oil in a kadai and sputter mustard seeds.

2. Make a fine paste of ginger and garlic, and add to the oil.

3. Sauté the contents, followed by chillies and curry leaves.

4. Add dates and pot tamarind, and keep cooking till it’s smashed well.

5. Add ingredients no: 6 and sauté till a thin layer of oil appears on the surface of the pickle.

6. Turn off the flame and add vinegar.

7. Allow the pickle to cool off completely and store in an air-tight container.
