Mambazham Vilayicha Ada (also spelled Mambazha Vilayicha Ada or Mango Pancake Ada) is a simple, traditional Kerala-style sweet pancake/snack made with ripe mango (mambazham) pieces incorporated into a batter or filling. Unlike classic steamed ela ada or chakka ada (which are banana leaf-wrapped parcels), this version is more like a soft, pan-cooked or griddle-fried pancake where mango chunks are sautéed lightly and mixed into or topped on a maida (all-purpose flour) batter with milk, egg, sugar, and sometimes ghee for richness. So, literally it’s a fruit pancake prepared using seasonal mangoes.
Soft, fluffy pancake with juicy, caramelized ripe mango pieces — this Mango Ada is mildly sweet, fruity, and comforting. The mango “vilayichu” (sautéed/cooked) adds a jammy, tropical flavor.

Ingredients for Mango Pancake (Mambazham Vilayicha Ada):
- Milk – 10 small spoons (50 milli)
Egg – 2
Sugar – 4 small spoons
Maida – 100 gm
Mango pulp – 100 milli
Refined oil – 50 milli
Cardamom powder – 1 small spoon - Ghee – 4 small spoons
- Mango – 200 gms, cut into small square pieces
- Coconut scraped – ¼ cup
Cardamom powder – 1 small spoon
How to prepare Mango Pancake (Mambazham Vilayicha Ada)?
- Take all ingredients listed as 1 into a bowl.
- Mix well and prepare the batter.
- Heat the ghee in a pan and sauté the mango pieces.
- Add ingredients no: 4 to it, mix well, and take it off the flame. This is the mango filling used for mango ada.
- Heat a non-stick pan and pour one ladleful of the batter.
- Prepare a pancake and place a little filling inside it.
- Fold it once, then cook it well by flipping both sides.
