Koova Kurukkiyath (Arrowroot Pudding)

Ingredients for Koova Kurukkiyath (Arrowroot Pudding):

1. Dry raw rice (Payasam rice/Unakkalari) – ½ cup 

2. Arrowroot powder – 1 cup 

    Thick coconut milk – 2½ cups 

3. Melted jaggery – ¾ cup 

4. Cardamom powder – ¼ teaspoon 

    Dry ginger powder – ¼ teaspoon

How to prepare Koova Kurukkiyath (Arrowroot Pudding)?

1. Wash the raw rice thoroughly and drain the water. Dry roast it in a thick-bottomed pan. 

2. When the rice starts puffing slightly (do not let it pop completely), remove from heat and let it cool. 

3. Mix arrowroot powder with thick coconut milk without forming lumps. 

4. Add melted jaggery to this mixture, transfer to a thick-bottomed vessel and place on low flame, stirring continuously. 

5. When it begins to thicken, add the roasted rice. 

6. When it reaches a thick consistency (not as thick as halwa), add cardamom powder and dry ginger powder, then remove from heat. 

7. Transfer to a flat tray and level the top with a spoon. 

8. Once cooled, cut into pieces. Suitable for children.
