Ilayada is the basic Kerala ada, frequently prepared in Kerala homes. Also known as Banana Leaf Ada, it is a beloved traditional sweet from Kerala made with rice flour and a rich coconut‑jaggery filling. Wrapped in banana leaves and steamed to perfection, this delicacy offers authentic South Indian flavor and nostalgic comfort with every bite. Perfect as a snack or festive treat.

Ingredients for Ilayada (Banana Leaf Ada):
- Coconut scraped – 5 big spoons
Jaggery – 100 gm, scraped
Cardamom – 3, crushed
Ghee – 1 big spoon - Water – 200 milli
Salt – A pinch - Rice flour heated & fried – 200 gm
- Banana leaf pieces – As required
How to prepare Ilayada (Banana Leaf Ada)?
- Take all ingredients listed as 1 in a bowl, mix well, and keep aside.
- Boil water, adding salt. When it boils, add rice flour.
- Stir it well and turn off the flame.
- Before it cools completely, mix well and prepare soft dough.
- Spread a little dough each in torn banana leaves and place a little filling too.
- Fold it once to seal the dough.
- Continue the process till the whole dough and filling are used.
- Steam cook these ads for 10 minutes using a steamer.
