Chinese Potato Curry (Koorkka Curry)
Ingredients for Chinese Potato Curry (Koorkka Curry):
1. Chinese potato (Koorkka) – 250 gm
2. Tamarind – A small lemon-sized
Water – 2 cups
3. Tomato cut into small pieces – ½ cup
Sambar powder – 1 big spoon
Green chillies – 4, end split
Curry leaves – A little
Salt – For taste
4. Oil – 1 big spoon
5. Mustard – 1 small spoon
Fenugreek – ¼ small spoon
Red chillies – 3, broken into pieces
How to prepare Chinese Potato Curry (Koorkka Curry)?
1. Remove the skin of Chinese potato, wash well and cut into pieces.
2. Cook it well adding sufficient water.
3. Prepare tamarind juice adding 2 cups of water.
4. Add ingredients no: 3 to it, and boil it. Sour taste should not be excess.
5. Add cooked Chinese potatoes to it.
6. Cook the contents in low flame and allow it to boil. Put off the flame.
7. Heat oil and sauté ingredients no: 5. Add it to the curry and mix well.
