A light and comforting chicken parsley soup made with simple ingredients, perfect for a healthy and soothing meal.

Chicken Parsley Soup

Ingredients for Chicken Parsley Soup:

1. Olive oil – One tablespoon

2. Carrot – One cup, finely chopped

    Onion – 1, chopped fine

    Celery stem – One cup, finely chopped

3. Garlic – Two cloves, finely chopped

     Dried thyme – 1 teaspoon

4. Chicken stock – Five cups

     Beans – One and a half cups, cut into 1½-inch pieces

     Chicken breast – 450 g, boneless

     Salt, pepper powder – As required

5. Lemon juice – As required

6. Parsley – Finely chopped, for garnish

How to prepare Chicken Parsley Soup?

1. Heat olive oil in a thick-bottomed pan and add the carrot and celery. Sauté for about eight minutes.

2. Add garlic and dried thyme and sauté for one minute. Then add chicken stock, beans, and chicken breast. Cover and bring to a boil.

3. Once it starts boiling, reduce the flame and cook for 15 minutes.

4. When the chicken is cooked, remove only the chicken breast, let it cool for 5–10 minutes, then cut into small pieces. Add it back to the soup and mix in salt and pepper powder as required.

5. Add lemon juice, mix well, and transfer to serving bowls.

6. Garnish with parsley and serve hot.
