Spinach Red Cowpeas Thoran

Ingredients for Cheera Vanpayar Thoran (Spinach Red Cowpeas Thoran):

1. Finely chopped green spinach – Four cups

2. Red cow peas cooked (vanpayar) – One cup

3. Grated coconut – One cup

    Green chilli – 4

    Garlic – Four cloves

    Cumin – Half teaspoon

    Turmeric powder – Half teaspoon

4. Coconut oil – Two teaspoons

5. Mustard seeds – Half teaspoon

6. Dried red chilli – 2, broken into pieces

7. Salt – As needed

How to prepare Cheera Vanpayar Thoran (Spinach Red Cowpeas Thoran)?

1. Prepare the spinach and red cow peas (vanpayar) and keep aside.

2. Grind the third set of ingredients in a mixer, just like for a thoran, and keep aside.

3. Heat oil in a pan, splutter mustard seeds, and fry the dried red chilli.

4. Add the ground mixture and sauté well.

5. Add the spinach and salt, mix, cover, and cook.

6. Allow it to cook on low flame until it is done. It takes few minutes only.

7. Add the cooked red cow peas to spinach, mix well, and remove from flame. Water content should be fully absorbed.
