Aval Niracha Pazham Ada or Aval Pazham Ada is a traditional Kerala sweet pancake, made by filling soft banana batter pancakes with a fragrant mixture of rice flakes (aval), jaggery, coconut, and spices. This unique rice flakes–filled banana pancake brings together the natural sweetness of ripe banana and jaggery with toasted aval for a rich, comforting dessert or tea-time treat.

Ingredients for Aval Niracha Pazham Ada (Rice Flakes Filled Banana Pancake):
- Jaggery – 100 gm
- Ghee – 4 small spoons
- Sesame seeds – 1 small spoon
Green gram dal – 2 small spoons - Coconut bits (chopped into thin, lengthy pieces) – 4 big spoons
- Rice flakes – 100 gm
- Cardamom powder – 1 small spoon
Cumin powder – ¼ small spoon
Dry ginger powder – ¼ small spoon
For Pancake:
- Banana – 2, made into a smooth paste using a mixer
Eggs – 2
Milk – 100 milli - Maida – 100 gm
- Refined oil – 2 small spoons
How to prepare Aval Niracha Pazham Ada (Rice Flakes Filled Banana Pancake)?
- Melt jaggery by adding a little water, and then strain it.
- Heat ghee and sauté sesame seeds and dal, followed by coconut pieces.
- Add rice flakes and sauté for 1 more minute.
- Add melted jaggery and mix the contents well.
- Add ingredients no: 6, mix well and turn off the flame. This is used as filling.
- Mix ingredients no: 7 in a bowl.
- Add maida to it and prepare the batter without any lumps.
- Finally, add refined oil too.
- Heat a non-stick pan and spread a little batter to prepare a pancake.
- Flip both sides and cook well.
- Place a little filling in the middle and fold into a triangular shape.
- Continue the process for the remaining batter and filling.
- Serve this pancake hot.
