Kaaya Varuthath (Banana Chips 4-cut pieces)
Kaaya Varuthath (Banana chips) is an integral part of Kerala cuisine. It’s a common snack of Kerala made from raw Ethapazham (Nentrapazham), a type of long banana. Ripen banana (not fully ripened) is also used to make banana chips and it is bit sweet. Banana chips are available as rounded chips or 4-cup pieces, and it’s an integral part of Kerala Sadya, and placed at the left end of plantain leaf. Through this recipe I would tell you how to make 4-cut banana chips. It’s to be noted only Etha Kaaya/ Nentra Kaaya (a type of banana) is used for making banana chips, and should be of good quality.
Ingredients for Kaaya Varuthath / 4-cut Banana Chips:
1. Raw banana (Nentra Kaaya) after removing skin, split into 4 and finely chopped – 2 cup
2. Turmeric powder – 1 small spoon
3. Coconut oil – 3 cups (for frying)
4. Salt – As required
How to make Kaaya Varuthath / 4 – cut Banana Chips?
1. Mix turmeric powder in a little water and wash chopped banana pieces in this solution. Later drain off water completely.
2. Use a frying pan with thickened bottom for frying chips. Heat oil in the frying pan.
3. Add banana pieces to boiling oil and fry till it is done 3/4.
4. Mix salt in a little water and pour this solution to the oil.
5. When chips are fully cooked drain off the oil and allow the chips to cool.
6. You can use tissue paper to avoid excess oil content.
7. You can serve it hot, or after it is cooled.
Note:
1. If you need, you can also make rounded chips. If so you can finely chop banana to rounded pieces and fry in coconut oil.
2. Coconut oil gives the feel of Kerala cuisine. If you wish, you can also use oil of your preference.
