Malai Kofta

Ingredients for Malai Kofta:

For Kofta:

1. Potato – 250g, boiled and mashed

    Paneer – 125g, crumbled

    Salt – To taste

2. Bread – 4 slices, soaked and squeezed

3. Dry fruits (finely chopped) – ¼ to ½ cup

4. Oil – As required

For Curry:

5. Onion – 2

    Tomato – 2

    Chilli powder, Coriander powder, Turmeric powder – ¼ tsp each

    Dried red chilli – 2

    Cardamom – 2

    Cloves – 3

    Cinnamon – 1-inch piece

    Couscous – 2 tsp

    Cashew nuts – 6

    Ginger – 1-inch piece

    Garlic – 6 cloves

    Coriander leaves – A bunch

6. Curd – ½ cup

7. Milk – ¼ cup

8. Coriander leaves – For garnish

How to prepare Malai Kofta?

1. Mash the potatoes, paneer, and salt together in a bowl until well combined.

2. Add the soaked and squeezed bread pieces to the mixture and knead well to combine.

3. Shape the mixture into small balls, stuff each ball with dry fruits, and deep fry in hot oil until golden brown. Set aside. Kofta is ready.

4. Grind the ingredients listed under the fifth section into a smooth paste.

5. Heat oil in a pan, add the paste, and sauté well until the masala releases its aroma. Add yogurt and stir well.

6. Pour in the milk, stir, and let it simmer on low heat until it thickens.

7. Arrange the fried koftas in a serving dish and pour the prepared curry over them.

8. Garnish with coriander leaves and serve hot.
