Varutharacha Chicken Curry

Ingredients for Nadankozhi Kumbalanga Varutharacha Curry (Chicken – White Gourd Curry):

1. Coconut – 1 Large 

2. Onion – 1 Large, sliced lengthwise 

   Green chilli – 5-6, sliced lengthwise 

   Ginger – 1 Small piece, crushed 

   Chilli powder – 2-3 Small spoons 

   Coriander powder – 2 Small spoons 

   Turmeric powder – 1 Small spoon 

   Curry leaves – As needed 

   Salt – As needed 

3. Local chicken (Countryside chicken/Nadan Kozhi)- 0.5 Kg, cut into pieces 

   Potato – 1 Large, cut into chunks 

4. White gourd – 300-350 Grams, cut into large pieces 

5. Garlic – 3-4 Cloves 

    Fennel – A small amount 

   Cinnamon stick – A small piece 

   Cardamom – A small amount 

   Pepper – A small amount 

6. Coriander powder – 1 Small spoon 

7. Shallots – A little, sliced 

   Curry leaves – As needed 

8. Coconut oil – As needed

How to prepare Nadankozhi Kumbalanga Varutharacha Curry (Chicken – White Gourd Curry)?

1. Grate the coconut and keep half aside for roasting. 

2. From the remaining coconut, extract 1 cup first milk and 2 cups second milk. 

3. Add a little coconut oil to the second ingredients and grind well. 

4. Add chicken and potato to this mixture, then add the second milk and salt as needed, and set it for boiling. 

5. Boil the white gourd slightly in a little water and drain. 

6. When the chicken is cooked, add the white gourd and cook further. 

7. Add the kept coconut in a pan, along with fifth set of ingredients, and roast. 

8. When the roasted coconut turns light brown, add coriander powder and mix. (Masala powder can be used instead of coriander powder.) 

9. Grind this mixture in a mortar, mix it with the first milk, then add to the chicken curry and simmer well. 

10. After this, add shallots and curry leaves to coconut oil and sauté.
