Ingredients for Karikk Pudding (Tender Coconut Pudding):
- China Grass – 10g
Water – 1 cup - Tender Coconut Water – 2 cups
- Condensed Milk – 1 tin
Milk – 2.5 tins
Sugar – 8 tsp - Tender Coconut Flesh (Grated) – 1 cup
- Grated Coconut – 1/2 cup
Sugar – 2 tsp
How to prepare Karikk Pudding (Tender Coconut Pudding)?
- Cut the china grass into small pieces, wash and soak it. Drain excess water.
- Add 1 cup of water to the soaked china grass, and cook on low heat while stirring continuously.
- Once dissolved, remove from heat and mix in the tender coconut water. Set aside.
- In a heavy-bottomed pan, combine the third set of ingredients and cook while stirring continuously.
- When it reaches just before the boiling point, add the prepared china grass mixture, stir well, and remove from the heat.
- Pour this mixture into a setting dish and mix in the grated tender coconut. Let it cool and refrigerate to set.
- In a small pan, roast the fifth set of ingredients on low heat.
- Sprinkle this roasted mixture over the set pudding and serve chilled.
