Karikk Pudding recipe

Ingredients for Karikk Pudding (Tender Coconut Pudding):

  1. China Grass – 10g
    Water – 1 cup
  2. Tender Coconut Water – 2 cups
  3. Condensed Milk – 1 tin
    Milk – 2.5 tins
    Sugar – 8 tsp
  4. Tender Coconut Flesh (Grated) – 1 cup
  5. Grated Coconut – 1/2 cup
    Sugar – 2 tsp

How to prepare Karikk Pudding (Tender Coconut Pudding)?

  1. Cut the china grass into small pieces, wash and soak it. Drain excess water.
  2. Add 1 cup of water to the soaked china grass, and cook on low heat while stirring continuously.
  3. Once dissolved, remove from heat and mix in the tender coconut water. Set aside.
  4.  In a heavy-bottomed pan, combine the third set of ingredients and cook while stirring continuously.
  5. When it reaches just before the boiling point, add the prepared china grass mixture, stir well, and remove from the heat.
  6. Pour this mixture into a setting dish and mix in the grated tender coconut. Let it cool and refrigerate to set.
  7. In a small pan, roast the fifth set of ingredients on low heat.
  8. Sprinkle this roasted mixture over the set pudding and serve chilled.
