Ginger gruel, also called Ginger Congee, helps to keep the body warm during the rainy season and improves digestion. It also helps to reduce Vatha and Kafa related issues, and provides relief from mild fever and cold.

Ginger Gruel

Ingredients for Ginger Gruel (Inchi Kanji):

1. Njavara rice – Half cup

2. Ginger – One small piece

    Shallots – Five to six

    Garlic – Two cloves

    Cumin – 1/4 teaspoon

3. Salt – As needed

4. Coconut oil – Two teaspoons

5. Curry leaves – One sprig

How to prepare Ginger Gruel (Inchi Kanji)?

1. Soak the Njavara rice for five to six hours.

2. Add the crushed ingredients listed in section two to the rice and cook it well.

3. Once the gruel is cooked, add salt and the seasoning made with curry leaves and coconut oil.

4. Mix it well and serve hot.
