Among vegetables, one that many people tend to overlook is bottle gourd. In Hindi, it’s called lauki, and in Malayalam, churakka. Many people, especially in northern states, see it as an unappealing food item. However, since it has a high-water content, it is excellent to include in your summer diet. Rich in fiber, bottle gourd aids digestion, and because it contains potassium and magnesium, it helps improve heart health. Let’s now see how to make the lesser-known bottle gourd roti.

Bottle Gourd Roti recipe

Ingredients for Churakka Roti (Bottle Gourd Roti):

1. Grated bottle gourd (churakka) – ½ cup

2. Rava (semolina) – 1 cup

3. Yogurt – 1 cup

4. Onion (finely chopped) – ½ cup

   Capsicum (finely chopped) – ½ cup

5. Green chili (chopped) – 1 small teaspoon

6. Ginger (grated) – ½ small teaspoon

7. Black pepper powder – 1 small teaspoon

8. Cumin seeds (grated) – ½ small teaspoon

9. Coriander leaves – As needed

10. Fruit salt – 1 tablespoon

11. Water – As needed

12. Salt – As needed

How to prepare Churakka Roti (Bottle Gourd Roti)?

1. In a bowl, mix rava, yogurt, cumin seeds, and water to prepare a medium-thick batter.

2. Add the prepared bottle gourd, chopped onion, capsicum, ginger, green chili, black pepper powder, and salt. Mix well.

3. Add coriander leaves and stir, then let the mixture rest for 10 minutes.

4. Dissolve the fruit salt in a little water and add it to the batter. Fruit salt helps make the roti soft.

5. Heat a pan with a little oil, pour a portion of the batter, and spread it in a circle. Cook on both sides like a dosa until done.

6. Serve hot with raita, chutney, or curry.
