Rice Noodles with chicken

Ingredients for Rice Noodles:

1. Olive oil – One big spoon

2. Chicken breast, after removing bones and skin, and cut into half-inch pieces – 3/4 kilo

3. Salt and Pepper powder – As needed

4. Garlic – 3 cloves, crushed

    Red Capsicum – 1, cut into square pieces

    Onion – 1, cut into square pieces

5. Red curry paste – 3 big spoons

    Ginger chopped – 1 big spoon

6. Chicken stock – 6 cups

    Coconut milk – 400 ml

7. Rice noodles – 115 gm

    Fish sauce – 1 big spoon

    Brown sugar – 2 small spoons

8. Spring onion – 3, chopped

    Coriander leaves chopped – Half cup

    Basil leaves chopped – Quarter cup

    Lemon juice – 2 big spoons

    Salt and Pepper powder – As per taste

How to prepare Rice Noodles?

1. Heat olive oil in a thick-bottomed pan.

2. Add sufficient salt and pepper to the chicken breast pieces and fry in the oil.

3. After 2-3 minutes, when the chicken turns golden brown, take it from the pan.

4. Add ingredients 4 to this pan and saute for 3-4 minutes until they turn soft.

5. Add red curry paste and chopped ginger and saute for a minute.

6. Add chicken stock and coconut milk, and stir all the contents from the bottom to avoid sticking.

7. Add chicken and allow it to boil. Reduce the flame and cook for 10 minutes.

8. And ingredients 7 and keep stirring for 5 minutes.

9. Put off the flame and add ingredients 8.

10. Mix them well and serve them soon.
