Vegetable Stir Fry

Ingredients for Vegetable Stir Fry:

1. Oil – As required

2. Cumin seeds – ½ small spoon

    Urud daal (Uzhunnu Paripp/black gram daal) – ½ small spoon

3. Onion – 1, medium sized

4. Chilli powder – 1 small spoon

    Turmeric powder – 1 small spoon

5. Potatoes cut into small pieces – ½ kg

6. Salt – As required

7. Green peas – ½ cup

8. Corn – ½ cup

9. Red capsicum – ½, cut into small pieces

10. Coriander leaves – To garnish

How to prepare Vegetable Stir Fry?

1. Steam cook corns and green peas.

2. Heat oil and fry cumin seeds and black gram daal.

3. When it turns red, add onions and sauté again.

4. When onions turn crystal-like, add chilli powder and turmeric powder and mix well.

5. Add potatoes and sauté again.

6. Add salt and sprinkle water occasionally to cook the potatoes.

7. Stir continuously.

8. Continue the process till potatoes are well cooked (but never overcook them).

9. Add capsicum and cooked corns & peas.

10. Close the lid and cook for 2-3 minutes.

11. Check salt and take off from flame.

12. Decorate with cilantro and serve hot.
