Special Chicken Curry

Ingredients for Special Chicken Curry:

1. Oil – ½ cup

2. Onion – 2, medium sized, chopped thin

3. Garlic – 8 cloves, crushed

    Ginger – 1-inch piece, crushed

4. Chicken – 1 kg, cut into pieces

    Salt – ¼ tsp

5. Coriander – 1 small spoon, crushed

    Cumin seeds – 1 small spoon

    Pepper – 6 seeds

    Cloves – 4

6. Coriander powder – 1 small spoon

    Chilli powder – 1 small spoon

    Red chillies crushed – ½ small spoon

   Turmeric powder – 1/2 small spoon

   Pepper powder – 1/4 small spoon

7. Green chillies – 3, chopped thin

8. Tomato – 2 small-sized, made to a paste

9. Coriander leaves chopped – As required

How to prepare Special Chicken Curry?

1. Heat oil and sauté onion for approximate 12-15 minutes.

2. When it turns golden brown, add 2 big spoons of water.

3. Stir it well along the edges/sides and boil it.

4. When water is fully absorbed, sauté garlic and ginger.

5. When raw smell goes out, add 2 big spoons of water, and stir again.

6. Add cleaned chicken along with ¼ tsp salt and cook for 5 minutes.

7. Mix ingredients no: 5 and 6, and add to chicken.

8. Add sufficient salt and green chillies, and sauté for 2-3 minutes.

9. Stir it well, till contents in the edges are also added to chicken.

10. Add tomato paste and sauté for 2-3 minutes till a thin layer of oil appear on edges.

11. Add 1 ¾ – 2 glasses of water and mix the contents well.

12. Close the lid and boil the contents.

13. Reduce the flame and cook for 25 minutes. Stir occasionally.

14. When chicken is well cooked, check salt and other ingredients.

15. Keep lid open for 4-5 minutes.

16. When a thin layer of oil appears on surface, put off the flame.

17. Decorate with coriander leaves.

18. Serve hot with rice, naan or roti.
