Pine Apple Biryani

Ingredients for Pine Apple Biryani:

1. Basmati rice – 2 cups

2. Pine apple – 1, cut into very fine pieces

    Sugar – A little

3. Small soya nuggets – ¼ cup

4. Onions – 2

    Ginger – 1 small piece

    Garlic – 4 or 5 cloves

    Mint leaves – 10-12

    Coriander leaves – ½ bundle

    Fennel seeds – 1 small spoon

5. Ghee/oil – 2 big spoons

6. Cloves – 2

    Cinnamon – 2 pieces

    Bay leaf (Vayana Ila) – 1

    Star anise – 1

    Onions – 2

    Chilli powder – 1 small spoon

7. Salt – For taste

8. Ghee/oil – 2 big spoons

9. Cardamom – 2

     Turmeric powder – ½ small spoon

10. Curd whipped – ½ cup

     Tomato – 2, chopped fine

11. Salt – As required

      Biryani masala powder – 2 small spoons

How to prepare Pine Apple Biryani?

1. Soak rice for two hours.

2. Cook pineapple adding sufficient water and a little sugar.

3. Soak soya nuggets in hot water for 15 minutes, squeeze water and fry in oil.

4. Make a fine paste of ingredients no: 4.

5. Heat ghee and sauté ingredients no: 6 for 2 minutes.

6. Add rice and mix the ingredients well.

7. Add sufficient water and salt and cook rice.

8. Heat the left ghee in another pan and add ingredients no: 9 and cooked pine apple. Sauté the ingredients for 3-4 minutes.

9. Add gravy, tomatoes and curd and sauté again.

10. Add salt, biryani masala and fried soya and mix well the ingredients.

11. Sauté well for 5 more minutes and add cooked rice.

12. Mix it gently and cook for 10 more minutes with lid closed, in low flame.

13. Decorate using fried cashews, raisins, onions and bread crumbs.
