Minestrone Soup

Ingredients for Minestrone Soup (Recipe 1):

1. Olive oil – 2 big spoons

2. Onions – 1 big, cut into square pieces

3. Garlic – 4 cloves crushed

4. Celery – 2 stems, cut into square pieces

    Carrot – 1 big, cut into square pieces

5. Beans, cut into half inch pieces – 1.5 cups

    Dried oregano – 1 small spoon

    Dried basil – 1 small spoon

    Salt and pepper powder – As needed

6. Tomato – 400 gm, chopped fine

   Chicken stock – 6 cups

7. Rajma (Kidney beans) – 400 gm, cooked

    Pasta – 1 cup

8. Parmesan cheese grated – 1/3rd cup

    Basil leaves chopped – 2 big spoons

How to prepare Minestrone Soup (Recipe 2)?

1. Heat olive oil in a pan and sauté onions.

2. When it turns soft, add garlic and sauté again, followed by celery and carrot.

3. When carrot is well cooked, add ingredients no: 5 and sauté for 3 minutes.

4. Add tomato and chicken stock and boil the contents.

5. Reduce the flame and cook for 10 more minutes.

6. Add ingredients no: 7 and cook for approximately 10 minutes.

7. When vegetables and pasta are well cooked, add sufficient salt and transfer to serving bowls.

8. Decorate with ingredients no: 8 and serve.

Minestrone Soup (Recipe 2)

Ingredients for Minestrone Soup (Recipe 2):

1. Tomato – 5

2. Oil – 1 small spoon

3. Onions chopped fine – 1 big spoon

    Garlic chopped fine – 1 big spoon

3. Carrot, potato, cabbage, beans, radish, chopped into small square pieces – 2 cups (total)

4. Vegetable stock – 1 litre

5. Macaroni – 1 cup, cooked

6. Salt and pepper powder – For taste

7. Celery chopped fine – 1 big spoon

8. Parsley chopped fine – 1 small spoon

    Cheese grated – 1 big spoon

How to prepare Minestrone Soup (Recipe 2)?

1. Put tomatoes in boiling water and take them out quickly.

2. Put them in cold water.

3. Remove seeds and skin of tomatoes, and cut into small pieces.

4. Heat oil in a saucepan, and sauté garlic and onions for 1 minute.

5. Add chopped vegetables and vegetable stock, and stir the contents.

6. When it starts boiling, add boiled macaroni, tomato, salt and pepper.

7. Continue cooking till the Minestrone Soup boils.

8. Add celery and wait till soup thickens.

9. Put off the flame and decorate your Minestrone Soup with parsley and cheese.
