Malai Gobi
Ingredients for Malai Gobi:
1. Cauliflower -1 big
Salt – As required
2. Onions – 4
Red chillies – 6-8
Ginger – 1 small piece
Garlic – 4 cloves
Coriander powder -1 small spoon
Turmeric powder – ½ small spoon
Garam masala powder – 1 small spoon
3. Oil – 3-4 big spoons
4. Tomato – 4, chopped into fine pieces
5. Cinnamon powder – 1 pinch
Cardamom – 3, powdered
Green peas cooked – ½ cup
6. Fresh cream – 1 cup
How to prepare Malai Gobi?
1. Cut of the lower end of cauliflower containing leaves.
2. Dip in warm water for a while to remove pests and worms.
3. Then marinate with salt and steam cook cauliflower. It should not be fully cooked, only 3/4th is sufficient.
4. Make a fine paste of ingredients no: 2.
5. Heat oil, sauté this gravy for 5 minutes and add tomatoes later.
6. Sauté again till clear oil layer appears.
7. Add ingredients no: 5 and sauté for 2 more minutes.
8. Add 1-1.5 cups of water and fresh cream and cook in low flame for 6-7 minutes.
9. Add salt and cooked cauliflower and cook again.
10. Decorate with tomato rings, onion rings, broken cashews, coriander leaves and grated paneer.
11. Serve hot.
