Madhura Seva

Ingredients for Madhura Seva:

1. Besan (Gram flour) – 1 cup

    Rice powder – 1 cup

2. Salt and water – As required

3. Coconut oil – To fry

4. Sugar – 1 cup

How to prepare Madhura Seva?

1. Toss ingredients no: 1 and mix both the flours.

2. Add salt and water to it and make dough similar to chapathi’s.

3. Allow it to rest for 2 hours.

4. Heat oil in a pan with thick bottom.

5. Take seva nazhi (idiyappam maker) and insert the mould needed to make madhura seva.

6. Place dough inside the cylinder and squeeze the batter directly to boiling oil.

7. Fry and drain excess oil.

8. Continue the process till whole batter is done.

9. Heat sugar and bring it to boil.

10. When it turns thread like, bring the flame to low flame.

11. Put all the prepared madhura seva to the boiling sugar solution.

12. Mix well and put the flame off. Allow it to cool.

Madhura Seva (Recipe 2)

Ingredients for Madhura Seva (Recipe 2):

1. Gram flour – 3 cups

   Rice flour – ½ cup

   Sesame seeds – 3 small spoons

   Cumin seeds – 1 small spoon

   Soda powder – A pinch

   Hot ghee – 4 small spoons

2. Oil/Ghee – For frying

3. Sugar – 1.5 cups

    Water – ¾ cup

4. Cardamom powder – ½ small spoon

How to prepare Madhura Seva (Recipe 2)?

1. Add water to ingredients no: 1 and prepare the batter. Its consistency should be similar to idiyappam.

2. Put the suitable mould of madhura seva in your idiyappam maker, followed by batter.

3. Heat oil in a thick bottomed pan.

4. Press the sevanazhi into hot oil and prepare sev.

5. Boil water and sugar together and then add cardamom powder.

6. Put off the flame and beat the sugar solution well using a fork.

7. Continue beating till the solution turns white.

8. Add sev to it and mix well.

9. When sev cools off completely, store them in air-tight containers.
