Lamb Leg Saru in Chettinad Style (Lamb Leg Soup)

Ingredients for Lamb Leg Saru (Lamb Leg Soup) in Chettinad Style:

1. Lamb leg – ½ kg

2. Ginger-garlic paste – 1 small spoon

    Turmeric powder – ½ small spoon

3. Oil – 50 milli

4. Cinnamon – 1 piece

    Cardamom – 3

    Cloves – 2

    Cumin seeds – 1 small spoon

    Star anise – 2

    Kalpasi (Chettinad masala) – 2 grams

    Fennel seeds – 1 small spoon

    Bay leaf (Vayana Ila) – 2

    Marathi Moggu (Chettinad/ Mangalore Spice) – 2 gms

    Onions chopped fine – 200 gm

5. Curry leaves – 2 stems

    Green chillies – 5, end split

    Coriander leaves chopped – 4 small spoons

    Ginger-garlic paste – 4 small spoons

6. Tomato chopped – 200 gms

    Turmeric powder – ¼ small spoon

    Coriander powder – ¾ big spoons

    Chilli powder – 1 small spoon

7. Dal cooked water – 250 milli

8. Salt – For taste

9. Coriander leaves chopped – To decorate

How to prepare Lamb Leg Saru (Lamb Leg Soup) in Chettinad Style?

1. Cut lamb leg into small pieces.

2. Cook it adding ingredients no: 2.

3. Heat oil and sauté ingredients no: 4.

4. When onions are sauted well, add ingredients no: 5 and sauté again.

5. Add ingredients no: 6 and cook for a while.

6. Add cooked lamb along with its stock and mix well the contents well.

7. Add dal water and cook again.

8. Add sufficient salt and strain the soup.

9. Decorate with lamb legs and coriander leaves and serve.
