Vishu Kanji

Ingredients for Vishu Kanji:

1. Raw rice (Unakkalari or Pachari) – ½ kg

2. Green gram dal – 300 gm

3. Scrapped coconut – 2, extract 1st and 2nd milk

4. Salt – For taste

How to prepare Vishu Kanji?

1. Wash rice and drain water.

2. Slightly fry green gram dal.

3. Mix together and cook adding 2nd extract of coconut milk.

4. When it’s well cooked and Kanji thickens, put off the flame.

5. Add first extract coconut milk and mix well.

6. Add salt at the time of serving Vishu Kanji.

7. It tastes best with pickle, pappadam and Chakka Puzhukk.
