Vegetable Masala Rice
Ingredients for Vegetable Masala Rice:
1. Kaima rice – 1 kg
2. Salt – As required
3. Coconut oil – 2 big spoons
Ghee – 2 big spoons
4. Cloves – 4
5. Onions sliced – 4
6. Carrot finely chopped – ¾ cup
Beans chopped – 1 cup
Green chillies – 2, split into two
Cauliflower florets – 2 cup
7. Turmeric powder – ¼ small spoon
Water – As required
8. Garam masala powder – 1 small spoon
Crushed cumin seeds and pepper – ½ small spoon
9. Soya chunks fried – ¼ cup
Curry leaves fried – 2 stalks
Coriander leaves and pudina leaves chopped – ½ cup
How to prepare Vegetable Masala Rice?
1. Add salt to rice and cook till ¾ done.
2. Heat ghee and oil in a big pan and splutter cloves.
3. Then add onions and sauté it till it’s done.
4. Now add ingredients no: 6 to it and sauté again.
5. Once fully sauteed, add turmeric powder and enough water and cook the ingredients with lid closed.
6. When water content is fully absorbed, add ingredients no: 8 and mix well.
7. Put the flame off and add cooked rice and mix well.
8. Finally add ingredients no: 9, mix well and now your biryani is ready to serve.

Masala Vegetable Rice (Recipe 2)
Ingredients for Masala Vegetable Rice (Recipe 2):
1. Basmati rice – 1 cup
2. Ghee – 1 big spoon
3. Onion (chopped fine) – 1
Green chillies, chopped fine – 3
Ginger chopped fine – ½ small spoon
Garlic chopped fine – ½ small spoon
4. Coriander powder – ½ small spoon
Masala powder – ½ small spoon
5. Carrot chopped fine – ¼ cup
Beans chopped fine – ¼ cup
6. Mint leaves – A little
7. Salt – As required
Boiled water – 1.5 cups
How to prepare Masala Vegetable Rice (Recipe 2)?
1. Wash rice and keep aside.
2. Heat ghee in a cooker and saute ingredients no: 2.
3. Add ingredients no: 3 and stir well.
4. Add coriander powder and masala powder.
5. When masala smell comes out, add chopped beans and carrot.
6. Add rice and mint leaves, and mix well.
7. Add salt and boiling water, and close the cooker lid.
8. After 1 whistle comes out, put off the flame.
9. Open after 10 minutes and serve hot.

Note: If you are interested in non-vegetarian dishes, you can add chicken pieces cooked with salt and pepper. Add it along with rice, before closing the lid of pressure cooker.
