Vazhuthananga Kuzhamb (Brinjal Kuzhamb)
Ingredients for Vazhuthananga Kuzhamb (Brinjal Kuzhamb):
1. Small brinjal – ½ kg
2. Raw rice – 1 big spoon
Fenugreek – 1 small spoon
Black gram dal – 1.5 big spoons
Garlic – 1, full
Cumin – ½ small spoon
3. Oil – 3 big spoons
4. Onion chopped fine – 3 or 4
5. Tomato chopped fine – ¼ kg
Chilli powder – 1 big spoon
Coriander powder – 1 big spoon
Turmeric powder – 1 small spoon
6. Sugar – ¾ big spoons
Tamarind – A lemon sized
7. Coriander leaves – As required
How to prepare Vazhuthananga Kuzhamb (Brinjal Kuzhamb)?
1. Wash brinjals, and split into four. Keep the stalk portion as such.
2. Make a fine paste of ingredients no: 2.
3. Heat oil and sauté onions, followed by ingredients no: 5.
4. When a thin layer of oil appears on the surface, add brinjal and stir well.
5. When colour of brinjal starts changing, add sugar, tamarind and a little water.
6. Add coriander leaves and cook till brinjal is done.
