Vendakka – Kurumulak Mapas (Okra – Pepper Mapas)
Ingredients for Vendakka – Kurumulak Mapas (Okra – Pepper Mapas):
1. Okra – 600 gm
2. Coconut oil – 3 big spoons
3. Green cardamom, cloves and cinnamon – 1 each
4. Ginger – 1-inch piece, chopped
Garlic – 2 cloves, chopped
Onions – 2, chopped
Green chillies – 3, chopped
Curry leaves – 2 stalks
5. Chilli powder – 1 small spoon
Coriander powder – 1 small spoon
Turmeric powder – 1/2 small spoon
Garam masala powder – 1/2 small spoon
Salt – For taste
6. Coconut – 1.5, scrapped and extracted 1st and 2nd milk
7. Tomato -3, cut into square pieces
8. Curry leaves fried – 2 stalks
9. Coconut oil – 2 big spoons
How to prepare Vendakka – Kurumulak Mapas (Okra – Pepper Mapas)?
1. Wash okra and cut into small pieces.
2. Fry them in hot oil (only half-cooked).
3. Heat oil in a pan and sauté garam masala.
4. Now sauté ingredients no: 4.
5. When it turns brown, sauté with ingredients no: 5.
6. When the unpleasant smell changes, add fried okras, along with 2nd extract of coconut milk.
7. Cook the ingredients.
8. Add tomatoes and mix well.
9. Pour first extract of coconut milk and put the flame off.
10. Pour coconut oil and add fried curry leaves.
11. Mix well the okra curry.
