Palada Pradhaman for Kozhikode Sadya

Palada Pradhaman is an integral part of Malabar sadya. It needs only lesser ingredients. Yet Palada pradhaman is widely regarded as the king among Kerala pradhamans.

Ingredients for Palada Pradhaman for Kozhikode Sadya:

1. Ada made from unakkalari (payasam rice) – ½ cup

2. Milk – 1.5 litres

    Sugar – 1.5 cups

How to prepare Palada Pradhaman for Kozhikode Sadya?

1. Place an urli in flame.

2. Add sugar and milk to it and cook in low flame till contents thicken.

3. When milk changes to pinkish colour, add the prepared ada.

4. Cook again till contents thicken.

5. Put the flame off.

6. Serve hot or cooled.

Palada Pradhaman (Recipe 2)

Ingredients for Palada Pradhaman (Recipe 2):

1. Palada – 100 gm

2. Milk – 1.5 litres

3. Sugar – As needed

4. Ghee – 1 big spoon

How to prepare Palada Pradhaman (Recipe 2)?

1. Cook palada adding 1 litre milk.

2. When it turns pink colour, add remaining milk and cook again, in low flame.

3. Add sugar 1 handful each, and continue cooking till pradhaman thickens.

4. Add ghee to pradhaman and serve.
