Mulfum Mashi – An Arabian Dish


It’s a most popular Arabian dish. It is a special cabbage roll prepared using Basmati rice and minced meat. Let me give its secret recipe.

Ingredients for Mulfum Mashi:

1. Cabbage leaves – as required
2. Biryani rice – 1 cup
3. Fatty mutton minced – 1 cup
    Salt – as required
    Garam masala powder – ½ spoon
    Cashew nuts finely chopped – 2 big spoons
    Mint leaves finely chopped – as required
    Soup cubes – 4
    Oil – 2 table spoons
    Tomato paste or sauce – ½ cup
    Pepper powder – as needed
    Tomato finely chopped – ½ cup
    Lemon juice – 1 small spoon
4. Tomato sliced – ½ cup
5. Onion sliced – 1 cup

 

How to prepare Mulfum Mashi?

  1. Put cabbage leaves in water to make it soft. Never cook it. Then make it 3 inch square pieces.
  2. Soak biryani rice for half an hour and drain water.
  3. Mix together biryani rice, minced mutton, salt, garam masala powder, cashew nuts, mint leaves, 1 soup cube powdered, oil, tomato paste, ¼ cup pepper powder and ½ cup tomato pieces. Keep a little tomato paste for adding later.
  4. Fold one end of cabbage sheets as a fan with half inch width. Repeat the process for half of the cabbage leaves.
  5. Spread the rest cabbage leaves in a cooking vessel. Its bottom should be flat. Then spread tomato pieces and onions on its top.
  6. Place those cabbage rolls one above the other.
  7. Heat a little water in another vessel and put remaining soup cubes powdered with a little tomato paste and salt. Pour this mixture on the top.
  8. On the top place a few plates to close it completely.
  9. Cook in low flame till it’s done.
 
N.B: Plates are placed so that cabbage rolls will remain intact. Cabbage rolls never unfold when plates are placed on top. Add sufficient water only and when it’s cooked, water should be drained completely.
