Mathanga – Vanpayar Erisseri (Pumpkin – Red Beans Erisseri)
Ingredients for Mathanga – Vanpayar Erisseri (Pumpkin – Red Beans Erisseri):
1. Pumpkin pieces – 1 cup
Turmeric powder – 1 small spoon
Green chillies – 3
Salt – For taste
Water – 2 cups
2. Red beans (vanpayar) – ¼ cup
Salt – For taste
3. Coconut scrapped – ½ cup
Cumin seeds – 1 small spoon
Turmeric powder – 1/2 small spoon
4. Shallots – 2, chopped thin
Red chillies – 2, cut into 2 or 3 pieces
Chilli powder – 1.5 small spoons
5. Coconut scrapped – 1/4 cup
How to prepare Mathanga – Vanpayar Erisseri (Pumpkin – Red Beans Erisseri)?
1. Cook ingredients no: 1 and smash well.
2. Add salt to red beans and cook it separately.
3. Make a fine paste of ingredients no: 3.
4. Fry ¼ cup scrapped coconut till golden brown.
5. Heat oil and sputter mustard seeds.
6. Add shallots and fry well.
7. Sauté red chillies and then red chilli powder and sauté again.
8. Add grinded paste to it and mix well.
9. Add cooked pumpkin and red beans to it and mix well.
10. Check taste. If needed, you can add extra water and salt.
11. Take off from flame and sprinkle fried coconut on its top.
