Ghee Payasam (Ney Payasam) with Honey

Ingredients for Ghee Payasam (Ney Payasam) with Honey:

1. Payasam rice (Unakkalari) – ½ kg

2. Ghee – 125 gm

3. Jaggery – 1 kg

    Water – ¼ cup

4. Ghee – 250 gm

5. Honey – 1 cup

6. Kadali banana – 4, chopped

    Dates – 200 gm, chopped fine

    Black raisins – 200 gm

7. Ghee – 125 gm

8. Coconut pieces – From 1 coconut

9. Cardamom – 15 gm

    Cumin seeds – 100 gm

10. Sugar candy smashed – 250 gm

How to prepare Ghee Payasam (Ney Payasam) with Honey?

1. Wash rice and cook it adding water and ghee. Rice should never be overcooked.

2. Add ¼ cup water to jaggery and melt it by placing in flame.

3. Strain jaggery solution and add to rice.

4. Continue cooking till water content is fully absorbed.

5. Add 250 gm ghee at different intervals after jaggery solution is added.

6. When payasam separates from the edges of urli add honey and cook for 2 more minutes.

7. Keep stirring and sauté the contents.

8. Add ingredients no: 6, mix well and put off the flame.

9. Fry coconut pieces in the remaining 125 gm ghee.

10. When it turns to light brown colour, add to your ghee payasam.

11. Make a powder of cumin seeds and cardamom and add to payasam.

12. Finally add sugar candy and mix the contents well.
