Chicken Kabab


Ingredients for Chicken Kabab:

1. Chicken (medium sized of 1.5 kg) – 1

2. Bread pieces – 4

3. Milk – ½ cup

4. Ginger – 1 piece

5. Coriander leaves – 1 bundle

6. Green chillies – 3

7. Eggs – 2

8. Garam masala powder – 2 small spoons

9. Puthina leaves – a little

10. Salt – as required

11. Ghee – as required 

How to prepare Chicken Kabab?

1. Clean the chicken and add salt to it. Cook it as whole. Then remove bones from the cooked flesh.

2. Dip bread pieces in milk and squeeze it.

3. Make a fine paste of ginger, green chillies and puthina leaves. Then mix this paste with chicken flesh and bread pieces and make a fine paste again.

4. Add eggs and garam masala powder to this paste and mix well.

5. Take little by little and pierce in kabab skewer. Apply a little ghee on the skewer before the process.

6. Fix a few kababs like this and grill it in oven or any other method.

7. Add a little ghee once in a while. When it’s well cooked and its colour changes to grey, place them in a serving plate.

8. Decorate using onion rings and lemon pieces. Serve with putina chutney.  

Chicken Kabab – Recipe 2

Here I present yet another Chicken Kabab recipe published in Vanitha in 2010.

Ingredients for Chicken Kabab:

1. Chicken minced – 1 cup

2. Green papaya grated – 1 big spoon

3. Gram flour roasted – 1.5 big spoons (While roasting the flour should not change its colour)

4. Chilli powder – 1.5 small spoons

5. Garam masala powder – ½ small spoon

6. Turmeric powder – ¼ small spoon

7. Ginger paste – ½ small spoon

8. Garlic paste – ½ small spoon

9. Salt – For taste

10. Oil – For frying

How to prepare Chicken Kabab?

1. Mix together ingredients 1 to 9 and roll into finger shaped kababs.

2. Fry in hot oil. All sides should turn brown.

3. Pierce each kabab with sliced carrot on either side using toothpick, and serve aside tomato sauce.

Note: As green papaya is added to the mix, chicken will be cooked easily.
