Bhatkal Biryani

 
  

Ingredients for Bhatkal Biryani:

  1. Either chicken or mutton pieces – 1 kg
  2. (You can use mint mutton with bone as well)
  3. Kaima rice (Jeerasala) – 1 kg
  4. Onion  sliced – 1 kg
  5. Green chillies with stalk removed – 25-30
  6. Ginger-garlic paste – 4 spoons
  7. Tomato chopped – 300 gm
  8. Coriander leaves and mint leaves – as needed
  9. Garam masala powder – 1 tsp
  10. Lemon juice – from 1 or 2 lemon
  11. Salt – as needed
  12. Cinnamon – 3 inch piece
  13. Cloves – 4
  14. Cardamom – 4

Method of preparation of Bhatkal Biryani::

  1. Pre-heat oven 300 degree Fahreinheit
  2. Heat oil and saute onion.
  3. Then add green chillies, ginger-garlic paste, tomato, coriander leaves, puthina leaves and garam masala.
  4. Add chicken pieces along with lemon juice.
  5. Saute well, close the lid and cook well. It should not be dry. It should have some gravy.
  6. Heat ghee and fry rice.
  7. Add double quantity water, salt, cinnamon, cloves and cardamom.
  8. Half cook rice and drain water to prepare rice for biryani.
  9. Take a vessel. Add a little rice. Spread a little coriander and mint leaves and spread a little chicken/mutton on top.
  10. Again spread rice and continue the same process to get a few layers of rice-chicken/mutton.
  11. Tightly seal the vessel and bake the biryani in 300 degree Fahrenheit for 45 minutes.
