Urulai Ularthiyath

Ingredients for Urulai Ularthiyath:

1. Baby potato – ½ kg

2. Coconut – ½, scrapped

    Onions – 2

    Ginger – 1-inch piece, chopped

    Garlic – 3 cloves, chopped

    Red chilli powder – 2 small spoons

    Coriander powder – 2 small spoons

    Turmeric powder – 1 small spoon

    Garam masala powder – ½ small spoon

    Salt – For taste

    Pepper powder – 1 small spoon

    Fennel seeds– 1 small spoon

    Cardamom, cloves and cinnamon – 1 each

    Bay leaf (Vayana Ila) – 1

3. Coconut oil – 5 big spoons

4. Curry leaves – 2 stalks

How to prepare Urulai Ularthiyath?

1. Boil potatoes and fry them well.

2. Mix together ingredients no: 2 and blend well in mixer.

3. Heat 2 big spoons of oil, and sauté potatoes and gravy.

4. Close the lid and cook in low flame for 5 more minutes.

5. Open the lid, mix the ingredients well and cook till water content is fully absorbed.

6. Add the remaining oil and curry leaves to potatoes.

7. Roast in medium flame for approximately 10 minutes.

8. Potatoes should turn golden brown colour. Using a spatula, stir the contents occasionally.
