Vazhuthananga Chaaru

Ingredients for Uppi Chaaru (Vazhuthananga Chaaru):

1. Brinjal (Eggplant) green or violet – 350 gm, chopped into round pieces

2. Coconut oil – 2 big spoons

3. Red chillies – 2

    Urud dal – 3 big spoons

    Pepper – 2 small spoons

4. Coconut scrapped – 80 gm (approximately 5.5 big spoons)

5. Buttermilk – 200 milli

6. Salt – As required

7. Coconut oil – 2 small spoons

8. Mustard – ¼ small spoon

    Fenugreek seeds – ¼ small spoon

    Red chilli – 1

How to prepare Uppi Chaaru (Vazhuthananga Chaaru)?

1. Deep fry brinjal pieces in hot oil.

2. Sauté ingredients no: 3 in a little oil till urud dal turns golden brown.

3. Add this to coconut and grind to a smooth paste.

4. Add butter milk to this gravy and cook in low flame.

5. Add fried brinjal pieces.

6. When it starts to boil, add salt and put off the flame.

7. Temper ingredients no: 8 in hot oil and add to curry.
