Thenga Kanji (Coconut Congee for Vishu)

Ingredients for Thenga Kanji (Coconut Congee for Vishu):

1. Puzhungalari (par boiled rice) – ½ kg

2. Coconut – 2 big, scrapped

    Salt – For taste

How to prepare Thenga Kanji (Coconut Congee for Vishu)?

1. Wash rice and cook it adding sufficient water.

2. Crush coconut and add to rice when it’s well cooked.

3. Also add sufficient salt and mix well.

4. Put off the flame and close the lid for next 10 minutes.

5. You can take outer layer of banana stem for serving Thenga Kanji.

6. It is cleaned well and folded 4 times to make a little thicker.

7. Coconut leaf midrib (eerkil) is used to fix both sides.

8. You can serve Kanji inside it. You can also place tip banana leaf before you pour Kanji.

9. You can serve Chakka Erisseri and Jackfruit chips (Chakka Varuthath) as side dishes.

10. Leaves of jackfruit tree are used to make spoons for serving Kanji.
